Lion's Mane Brownies

These delicious Lion's Mane Brownies are a healthy way to get the whole family to enjoy medicinal mushrooms. They are gluten free and contain no processed sugar and are absolutely delicious!


Ingredients:

20g Supreme Shrooms Lion's Mane extract powder

170g butter, at room temperature

1/2 cup Canadian maple syrup

1/3 cup coconut sugar

2 lemons, rind finely grated

3 whole eggs

1 cup almond meal

150g cashews, roughly chopped

200g pitted dried dates, halved lengthways

1/2 teaspoon ground cinnamon

Method:

  • Preheat oven to 180°C. Line a 25 x 30cm pan with non-stick baking paper.

  • In a mixing bowl, place the Lion's Mane extract powder, butter, maple syrup, coconut sugar and lemon rind and beat with an electric mixer until smooth.

  • Then add the eggs, 1 at a time, beating after each addition until the mixture is well combined.

  • Now add the almond meal and continue to beat, scraping down the side of the bowl until just combined.

  • Using a wooden spoon, stir in the cashews and dates into the mixture.

  • Now spoon the mixture into the lined pan, using the back of a spatula to smooth it out.

  • Bake for about 30-35 minutes or until golden and a skewer inserted in the centre of the slice comes out clean.

  • Remove from the oven and let it cool before turning onto a wire rack.

  • Remove the baking paper and carefully turn the right way up.

  • Finally, sprinkle the cinnamon over the slice before cutting into rectangular pieces.
